Blueberry and macadamia smoothie

This deliciously nutritious smoothie packs a macadamia nut protein-punch. Not only is it a wonderfully fresh and healthy summer breakfast or afternoon snack, but blueberries are one of the most anti-oxidant rich foods you can eat. These juicy little berries are also high in phytoflavinoids, which protect our bodies from oxidative stress, and immune-boosting vitamin C.

 

Ingredients

1 cup of blueberries, fresh or frozen
3 handful spinach
10-15 macadamia nuts, preferably soaked for 8 hours
1 cup coconut milk
½ cup water

Method

Purée all ingredients in a blender until smooth.
If smoothie is thicker than desired,
Add additional water or coconut milk.
