Raw Snowflake Energy Balls

Raw Snowflake Energy Balls

Easy to make homemade ‘Date, Nut and coconut raw snowflake energy balls’- delicious, nutritious and perfect for a snack or a dinner party gift!

Serves 10- 20

Ingredients

 

  • 6 pre-soaked dates
  • 125g ground almonds
  • 3 tbsp dried blueberries/raisins
  • 2 tbsp sesame seeds
  • 1 tbsp poppy seeds
  • 100g cup desiccated coconut
  • 2 tbsp vanilla extract/1 vanilla pod
  • 3 tbsp raw honey
  • 1 lemon zest or 1 tsp ginger (optional)

 

Method

 

  1. Add ground almonds and 60g coconut to your processor and give it a good mix
  2. Slowly add the remaining dry ingredients to the processor.
  3. Add honey and vanilla extract, and blend.
  4. Roll mixture into truffle sized balls before gently rolling in desiccated coconut
  5. Store covered in the fridge

      Remember, although refined-sugar free, this recipe contains dates which are dried fruits. All dried fruits are high in fructose so should be eaten in moderation. You guessed it, this recipe should feature in the 20% of 80/20!
