Angelique’s Sweet Potato Granola

Angelique’s Sweet Potato Granola

Nothing gets you up and moving in the morning like this crunchy and delicious bowl of granola! This  super healthy grain-free, sugar-free and dairy-free recipe is packed with the natural goodness and protein of nuts and seeds and the blood sugar balancing properties of cinnamon – guaranteed to keep you going until lunch time.

Ingredients

 

Granola

1 cup ground almonds
1½ cup sliced almonds
1 cup chia seeds
1 cup unsweetened coconut flakes
½ cup pumpkin seeds
½ cup sunflower seeds
2 tbsp sesame seeds
2tbsp flaxseed ground
1 cup pecans, chopped
½ cup / 60g coconut oil melted
1tbsp vanilla extract
Pinch of sea salt
1 cup sweet potato puree
2 tsp ground cinnamon

Sweet Potato Puree

4 sweet potatoes, peeled and roughly chopped
2 tablespoons olive oil
Pinch of salt

 

Method

 

Sweet Potato Puree

  1. Preheat oven to 200°C / 400°F / Gas Mark 6.
  2. Rub the sweet potato chunks with olive oil and salt
  3. Bake in the oven until tender – about 30-35 minutes.
  4. Once cooked purée with a stick/hand blender (or mash well by hand) and leave to cool.
  5. Once cool, store in one-cup batches in the freezer (in zip-lock bags or containers).

Granola

  1. Preheat the oven to 180C, gas mark 4.
  2. Line a baking tray with parchment paper/ baking sheet.
  3. In a large bowl combine coconut flakes, almonds, nuts and seeds.
  4. In a blender, combine the sweet potato puree, coconut oil and cinnamon.
  5. Add the puree to the dry ingredients and stir until dry ingredients are thoroughly coated.
  6. Spread the granola in a thin layer on the baking sheet.
  7. Cook for 40 minutes stirring occasionally to prevent burning.

Serving Suggestion

 

Serve with coconut milk or almond milk and toppings of:

  • Grated apple and cinnamon
  • Nut butter and berries
  • Berries and coconut yoghurt

  1. Loving the programme and the recipes!! Can you make this and store it in a sealed tub in a cupboard or fridge rather than freeze it all?

      Thanks for checking – Its only the sweet potato purée that needs freezing if you are not using it all at once.

      The granola is best kept in a sealed container in a cupboard. Hope you enjoy!

        Also I have made the cauliflower base pizza Absoultly DELICIOUS the whole family loved it .

          It should last a few weeks in an air tight container.

      Remember, although refined-sugar free, this recipe contains dates which are dried fruits and can raise your blood sugar levels. All dried fruits are high in fructose so should be eaten in moderation. You guessed it, this recipe should feature in the 20% of 80/20!

  3. Loved the programme and was great to see the contestants literally glowing skin as they ended the series .. A testament to the combination of your well balanced diet and the exercise and fresh air they had in their farm work – will you be putting together a recipe book of all the dishes you devised both fruit free and fruit laden as I would love to get a peek at it!

  5. How long will the granola keep for once it’s baked, if kept in a sealed container? It sounds delicious, just need to go and get all the ingredients.

  6. I do not like dates, in fact cannot even stand the smell of them! What can I use instead, please.

  7. Hi Angelique, after years of different diets and yo-yoing weight I am worried now I am 60 I am even more prone to weight related problems. I know it isn’t going to be easy but I must make the effort to take your advice.
    Ps. Will start with actually having a regular breakfast. Your Granola sounds great. When does the vanilla get added.

    • Hello Jacquie, I know what you mean- I have been there myself. The beauty of health is it starts with your next meal. So starting now is perfect! It’s about consistency above perfection.

      You can add the vanilla to the blender at the same time as the sweet potato purée. Thanks for spotting that!

  8. Why has the granola got no oats in it as I thought that they were good for you..?

    • Hello Vicky, this is a grain-free granola. An alternative to try! Plus it is a breakfast option for those who have any intolerances to oats or grains.
