Homemade Rooibos iced tea
A deliciously refreshing and healthy, refined sugar-free, homemade Rooibos iced tea recipe, perfect for cooling down on a hot summers day!
Also known as Redbush tea in the UK and found in most local supermarkets and health food stores, Rooibos tea was originally discovered in South Africa and is quickly becoming a popular in western countries due to its wonderfully robust flavour and many health benefits. Not only is it caffeine-free, but it is also rich in Antioxidants (which protect our bodies from the cell-damaging effects of free-radicals) and mineral Dense – it contains many vital minerals such as magnesium, calcium, manganese, zinc and iron.
It is also thought to improve blood circulation and to settle the stomach!
Here is a wonderfully quick and easy recipe for a refreshing Rooibos Iced tea:
Ingredients
2x Tea Bags Rooibos tea
1x Lemon
500ml Boiling water
250ml Cold water
2 cups of crushed ice or ice cubes
Small Handful of fresh mint leaves
Coconut nectar or xylitol to sweeten to taste
Method
1. Place the 2 teabags in a 1 litre glass jug and add 500mls of boiling water.
2. Allow the tea to steep for 15-20mins, stirring regularly.
3. Slice half of the lemon along the width into thin slices.
4. Squeeze the other half of the lemon.
5. Add the juice to the tea and water, stir and continue allowing it to steep
6. If necessary use Xylitol or coconut nectar to sweeten the tea to taste.
7. Remove both tea bags.
8. Add a handful of fresh mint leaves.
9. Add the 250mls of cold water and stir.
10. Add the two cups of ice.
Serving suggestion
Instead of using lemon and mint to flavour the tea why not try using the following combination:
Fresh berries and apple
Orange and a cinnamon quill.

Remember, although refined-sugar free, this recipe contains dates which are dried fruits. All dried fruits are high in fructose so should be eaten in moderation. You guessed it, this recipe should feature in the 20% of 80/20!
