Unpasteurised organic sauerkraut containing health-boosting lacto bacteria, which supports both the digestive and immune systems. Mildly flavoured with a crisp, crunchy texture. As an unpasteurised sauerkraut, this product requires a special lid to allow it to continue to ferment. We recommend using a round tipped knife or similar utensil to lever up the edge. It should then be possible to peel off the lid. In order to enjoy the sauerkraut at its best we recommend consuming the contents of the jar within 3-4 days after opening

Our fermentation process starts at room temperature and the product is closely monitored for the first few days. Once the corresponding levels of lactic acid are achieved the product is then chilled. How long this takes can differ and we keep control samples to check the PH and lactic acid values; this period can take between 7- 14 days. The fermentation process is a natural process that cannot be interrupted by cooling until the desired levels are achieved. As the final product is fresh and unpasteurised the bacteria remains active and alive, and the sauerkraut continues to ferment and produce bacteria until consumption.
